Storage or Usage Information

Directions: Mix 400 g of Elfroy with 1 liter of water.
It may be enriched by substituting half of the water with whole milk.
Mix on high speed for a minimum of 6 minutes to smooth the starches. Whisk again after resting for any extended period to smooth out the pastry cream.
Stays firm, does not crust. Freeze stable
