Fizz Powder
A sweet, sherbet blend, which releases carbon dioxide fizz-bubbles in contact with liquid or moisture on the tongue. The fizz is created by a reaction of (tartaric) acid + sodium hydrogen carbonate to form - salt + water + carbon dioxide.
Fizz powder can be blended with other flavours such as lime zest, lavender, green tea or even chilli for a sherbet dessert garnish or added to a liquid base (fruit coulis, cocktails etc.) to create effervescence. Fruit flavours can be highlighted by tossing selected fruits in fizz powder just before serving.
