Roquefort
Millions of year ago, natural caves formed in the Combalou mountains near the French village of Roquefort-sur-Soulzon. These caves have been transformed to provide the perfect ripening conditions for Roquefort, a unique cheese made with whole, raw sheep milk.
Roquefort is known for a unique flavour which is why it is so popular. It begins as a somewhat mild flavour which turns sweet and smoky, eventually rounding out to a salty finish.
