Wookey Hole Cave Aged Cheddar
Appearance: Uniform, even shape. Pale yellow/straw colour to body of cheese. Presented in a mould rinded cloth or as a cut wedge- mould staining is typical on the rind.
Flavour/Aroma: Showing mature through to vintage flavour profile and farmhouse cheddar character, dependent on customer requirements. Clean typical for variety, free from taints. Earthy/rindy cave notes will be present due to ageing process.
Texture: Firm and close texture, can become more flinty with age.
